Salsa Cruda

Ingredients

4 small tomatoes seeded and diced
2 tablespoons finely sliced green onion
1/2 cup finely chopped cilantro
1 medium jalapeno pepper seeded and finely chopped
1 tablespoon red wine vinegar
1 tablespoon fresh lemon juice
2 tablespoons vegetable oil
1/4 tablespoon salt
1/4 tablespoon fresh ground pepper

Directions

Combine tomatoes, green onions, and cilantro in a non-reactive (non-metal) bowl. Add vinegar, lemon juice and oil, mix well. Let rest and chill for 30 minutes to allow flavors to blend.
